Hardboiled eggs done as Deviled Eggs Appetizer and made into Egg Salad.
Depending on how many eggs you want to use the ingredients will change. I used 6 eggs and for the Deviled eggs used the yolks plus 1 Tablespoon mayo and 1 tablespoon sour cream plus 2 teaspoons of mild curry powder.
For 6 eggs for egg salad I do 3 tablespoons of mayo and 2 tablespoons sour cream with 1.5 Tablespoons Curry Powder.
Let sit at least an hour before you serve, the additional time gives the layers of spice time to blend .
Play with it, how creamy and spicy do you like it? I like my Deviled eggs drier than I like my egg salad. I cannot stress enough to you that cooking has to be done according to your tastes. I know that flies in the face of all cookbooks and most folks on TV. I want you to become comfortable in the kitchen and tailor what I make to your tastes.
